Does the globe come off?

The globe sits toward one side of the tray, which is what leaves usable surface beside it for a glass or a book.

How stable is it on grass?

Three legs settle on uneven ground better than four, which is the advantage of the tripod, and at about 10 kilograms it does not move in a breeze. There is nothing to install and no cable to run. On soft lawn the legs will sink a little, so choose firm ground.
