How to choose dimmable wall sconces

Beside a bed is where the feature pays off. Wall dimmer or a control on the fitting?

Can a hardwired sconce be dimmed without new cable?

Yes, where the existing wall switch can be swapped for a dimmer. That is a switch change rather than a rewire, though some smart dimmers need a neutral wire at the box. The fitting itself still has to state dimmable for any of it to work.
